This fall he was busy making boiled shrimp for the Bayou Bend Collection and Gardens in Houston, Texas, a roasted boar's head for the Herbert Hoover Presidential Library and Museum in West Branch, Iowa and a gallantine for the Villa Louis Historic Site in Prairie du Chien, Wisconsin. Another order this fall was a Twelfth Night Cake for Independence Hall in Philadelphia, Pennsylvania. Where does one get a boar's head to cast? Well fortunately, the butcher shop in Ingram, Texas had one they were about to throw out, so a cast was made from the real thing. Some other new items are: bacon, fried chicken, mustard greens with salt pork, pork roast, a fricassee surface, a hominey surface and sliced tomatoes.
